Method

Pasta Preparation

  1. 1

    Cook the Fettuccine

In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Grilled Vegetables

  1. 2

    Grill the Asparagus

Preheat a grill or grill pan over medium-high heat. Toss the asparagus with olive oil, salt, and pepper. Grill for 5-7 minutes, turning occasionally, until tender and slightly charred. Set aside.

  2. 3

    Sauté the Tomatoes

In a large skillet, add the halved cherry tomatoes and cook over medium heat until they start to soften, about 3-4 minutes. Remove and set aside.

Shrimp Scampi Preparation

  1. 4

    Sauté the Shrimp

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp and cook until they turn pink, about 3-4 minutes.

  2. 5

    Add Wine and Seasoning

Pour in the white wine and bring to a simmer. Add the sliced scallions, salt, and black pepper. Cook for an additional 2-3 minutes until the sauce slightly thickens.

  3. 6

    Combine Ingredients

Add the cooked fettuccine to the skillet, tossing gently to combine with the shrimp and sauce. Add the grilled asparagus and sautéed tomatoes, mixing until everything is heated through.
