Preparation
- 1
Fry the Tortillas
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the corn tortillas, one at a time. Fry until they are golden and crispy, about 1-2 minutes per side. Remove and drain on paper towels.
- 2
Cook the Chorizo
In the same skillet, add the chorizo sausage. Cook over medium heat, breaking it apart with a spatula, until it is fully cooked and browned, approximately 5-7 minutes.
- 3
Fry the Eggs
In a separate non-stick skillet, fry the eggs sunny-side up or to your preferred doneness. Season with salt and pepper to taste.
- 4
Prepare the Tostadas
Spread about 0.5 cup of refried beans on each fried tortilla. Top with cooked chorizo, a fried egg, and drizzle with chipotle salsa.
- 5
Garnish
Finish the tostadas with pickled onions, crumbled queso fresco, a dollop of sour cream, and sliced avocado.
