Pasta Preparation

Cook the Pappardelle
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.
Bolognese Sauce Preparation

Sauté the Vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Cook, stirring frequently, for about 5-7 minutes until the vegetables are softened and translucent.

Brown the Meat
Add the ground beef and ground pork to the skillet. Cook until browned, breaking up the meat with a spoon, about 8-10 minutes.

Incorporate Tomatoes and Simmer
Add the crushed canned tomatoes, salt, and pepper. Bring to a simmer, then reduce the heat to low and let it cook for 30-40 minutes, stirring occasionally.

Finish with Milk
Stir in the milk and let the sauce simmer for an additional 10 minutes to meld the flavors.
Combining and Serving

Combine Pasta and Sauce
Add the cooked pappardelle to the bolognese sauce. Toss gently to coat the pasta, adding reserved pasta water as needed to achieve desired sauce consistency.

Serve with Cheese
Plate the pappardelle bolognese and sprinkle with grated pecorino romano cheese before serving.
