Prepare the oven
Preheat your oven to 350°F (175°C).

Make the crust
In a medium bowl, combine graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.

Form the crust
Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan. Ensure it's evenly packed.

Bake the crust
Bake in the preheated oven for 10 minutes or until lightly golden. Remove from the oven and let it cool completely.
Filling Preparation

Mix the filling
In a large mixing bowl, combine the ricotta cheese, 1 cup of granulated sugar, fresh lemon juice, lemon zest, and vanilla extract.

Add eggs
Add the eggs to the ricotta mixture, one at a time, mixing well after each addition until fully incorporated.

Pour into crust
Pour the lemon filling into the cooled graham cracker crust, smoothing the top with a spatula.

Bake the tart
Return the tart to the oven and bake for 25-30 minutes, or until the filling is set and the edges are slightly puffed.

Allow the tart to cool at room temperature for 1 hour, then refrigerate for at least 2 hours before serving.
