    Peel and dice the potatoes into small cubes. Rinse them under cold water and pat dry with a paper towel.

    Peel the onion and slice it thinly.

    Using a sharp knife, poke holes in the Italian sausage links to prevent them from bursting while cooking.

    Cook the potatoes and onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and sliced onions, season with salt and pepper. Sauté for about 10-15 minutes or until the potatoes are golden brown and tender.

    In a separate pan, cook the Italian sausage links over medium heat for about 8-10 minutes, turning occasionally until they are browned and cooked through. Ensure they reach an internal temperature of 160°F (70°C).
