    Prepare the Marinade

    In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, and fresh dill (if using). This will be used to marinate the salmon.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let it marinate in the fridge for at least 30 minutes.

    Cook the Rice

    Rinse the basmati rice under cold water until the water runs clear. In a pot, add 2 cups of water to 1 cup of rice. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.

Grilling and Cooking

    Prepare the Vegetables

    While the rice is cooking, wash and trim the asparagus. Peel and slice the carrots into thin strips or rounds.

    Grill the Salmon

    Preheat your grill to medium-high heat. Place the marinated salmon on the grill and cook for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

    Char the Lemon

    Cut the lemon in half and place it cut-side down on the grill for about 2-3 minutes until charred. This will enhance its flavor.

    Sauté the Vegetables

    In a skillet, add a little olive oil over medium heat. Sauté the asparagus and carrots until they are tender, about 5-7 minutes.

Serving

    Plate the Dish

    On each plate, serve a portion of basmati rice, top with grilled salmon, and arrange sautéed asparagus and carrots on the side. Squeeze the charred lemon over the salmon for added flavor.

    Garnish and Serve

    If desired, garnish with additional fresh dill and serve immediately.
