Preparation

    Prepare the Pears

    Cut the pears in half lengthwise and remove the cores. Brush the cut sides with a little olive oil.

    Cook the Bacon

    In a skillet, cook the bacon slices over medium heat until crispy. Once done, remove them from the skillet and place on paper towels to drain the excess fat.

    Prepare the Onions

    In the same skillet, add the cippolini onions and sauté until they are caramelized and tender, about 8-10 minutes.

Grilling

    Grill the Pears

    Preheat the grill to medium heat. Place the pear halves cut-side down on the grill and cook for about 5 minutes, or until grill marks appear.

    Flip the Pears

    Carefully flip the pears and grill for an additional 4-5 minutes until they are tender.

    Warm the Cheeses

    Just before removing the pears from the grill, place slices of burrata and gorgonzola on top of the pears for 1-2 minutes to allow them to warm slightly.

Assembly

    Plate the Dish

    On a serving platter, arrange the grilled pears topped with warm burrata and gorgonzola. Crumble the crispy bacon over the top.

    Top with the caramelized cippolini onions and a handful of fresh arugula.
