    Prepare the Mushrooms and Onions

    Clean the wild mushrooms gently with a damp cloth to remove any dirt. Slice them into bite-sized pieces. Peel the cipollini onions and slice them thinly.

    Sauté the Mushroom and Onion Mixture

    In a skillet over medium heat, add 1 tablespoon of truffle oil. Once hot, add the sliced cipollini onions and sauté for about 3-4 minutes until they become translucent. Add the wild mushrooms and continue to sauté for another 5-7 minutes until they are tender and golden brown. Season with salt and pepper to taste.

    Combine with Cheese

    Once the mushrooms and onions are cooked, remove the skillet from heat. Mix in the fontina mozzarella cheese until it is melted and combined with the mushroom mixture.

    Plate with Arugula

    On a serving plate, arrange a bed of fresh arugula. Spoon the warm mushroom and cheese mixture over the arugula. Drizzle the remaining tablespoon of truffle oil on top for added flavor.
