Brussels Sprouts

Preheat your oven to 400°F (200°C).

Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until they are evenly coated.

Spread the Brussels sprouts in a single layer on a baking sheet.

Roasting the Brussels Sprouts
Roast in the preheated oven for about 20-25 minutes, or until the outer leaves are crispy and the sprouts are tender, stirring halfway through for even cooking.

Adding Prosciutto
While the Brussels sprouts are roasting, chop the prosciutto into small pieces. After 20-25 minutes, remove the Brussels sprouts from the oven and sprinkle the chopped prosciutto over them.

Finishing the Dish
Return the baking sheet to the oven and roast for an additional 5-7 minutes, until the prosciutto is crispy.

Preparing Chili Butter
In a small saucepan, melt the chili butter over medium heat until melted and bubbly. Remove from heat and set aside.
Serving

Once the Brussels sprouts and prosciutto are done, remove them from the oven and drizzle the melted chili butter over the top.

Grate the pecorino cheese over the Brussels sprouts.

Serve warm with a dollop of lime crema on the side or drizzled on top.
