Prepare the Catfish

Rinse the catfish fillets under cold water and pat dry with paper towels. Place the fillets in a shallow dish and pour the buttermilk over them, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

Make the Breading

In a large bowl, combine the cornmeal, flour, cayenne pepper, paprika, salt, and black pepper. Mix well to combine all the dry ingredients.

Bread the Catfish

Remove the catfish from the refrigerator. Take each fillet one at a time and dredge it in the cornmeal mixture, making sure to coat both sides. Shake off any excess breading and set aside on a plate.

Heat the Oil

In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading into it; if it sizzles, it's ready.

Fry the Catfish

Carefully add the breaded catfish fillets to the hot oil, frying them in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer the fried catfish to a paper towel-lined plate to drain excess oil.

Serve the Southern Fried Catfish hot with your choice of two sides like coleslaw and fries.
