Prepare the Sausage Mixture
In a large mixing bowl, combine ground pork, ground beef, garlic powder, onion powder, paprika, black pepper, salt, red pepper flakes, and sage. Mix thoroughly until all ingredients are well combined.

Prepare the Casings
Rinse the natural hog casings under cold water to remove any salt. Soak in warm water for 30 minutes before using.

Stuff the Casings
Fit a sausage stuffer with the soaked casings, and carefully stuff the mixture into the casings, being careful not to overfill. Tie off the ends of the sausages with kitchen twine.

Cook the Sausage Links
In a large skillet, heat a little oil over medium heat. Add the sausage links and cook for about 15-20 minutes, turning occasionally, until they are browned and cooked through. The internal temperature should reach 160°F (70°C).

Serve
Remove the sausages from the skillet and let them rest for a few minutes before slicing or serving whole. Enjoy your savory sausage links hot.
