Cooking Instructions
- 1
Prepare the Pork
In a large pot, combine the pork shoulder, chopped onion, minced garlic, and chicken broth. Bring to a boil over medium-high heat.
- 2
Simmer the Pork
Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, until the pork is tender and easily shreds with a fork.
- 3
Add Hominy and Spices
Once the pork is tender, remove it from the pot and shred it. Return the shredded pork to the pot, and add the hominy, oregano, cumin, chili powder, salt, and black pepper.
- 4
Cook the Soup
Stir everything together and let it simmer for an additional 30 minutes to allow the flavors to meld.
- 5
Serve
Ladle the posole into bowls and garnish with lime wedges, fresh cilantro, and sliced radishes. Enjoy!
