Prepare the Marinade
In a bowl, combine bourbon, soy sauce, brown sugar, minced garlic, minced ginger, salt, and black pepper. Mix well until sugar is dissolved.

Marinate the Chicken
Place chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Cook the Chicken
Heat olive oil in a large skillet over medium-high heat. Remove chicken from the marinade, allowing excess to drip off. Sear the chicken in the skillet for about 5-7 minutes on each side, until golden brown and cooked through.

Prepare the Glaze
While the chicken is cooking, pour the remaining marinade into a saucepan. Bring to a boil and let it simmer for about 5-10 minutes until it thickens slightly.

Drizzle the bourbon glaze over the cooked chicken, and garnish with chopped green onions. Serve with your choice of rice or vegetables.
