Sear the Roast

In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper, then sear on all sides until browned. Remove the roast and set aside.

Sauté the Vegetables

In the same pot, add chopped onion and garlic. Sauté until the onion is translucent. Then add the chopped carrots and quartered potatoes, stirring to combine.

Deglaze the Pot

Pour in the red wine, scraping the bottom of the pot to deglaze it. Allow the wine to reduce by half.

Add the Broth and Seasonings

Return the seared roast to the pot. Add beef broth, thyme, and rosemary. Bring to a simmer.

Cook the Roast

Cover the pot and reduce heat to low. Let it cook for about 3 to 4 hours, or until the meat is tender and shreds easily with a fork.

Serve

Remove the roast and vegetables from the pot. Let the roast rest for a few minutes before slicing. Serve with the vegetables and cooking liquid.
