    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves, but do not let it boil.

    Whisk the Egg Yolks

    In a separate bowl, whisk the egg yolks until they become pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour about half of the hot milk mixture into the egg yolks while whisking constantly. This will temper the yolks and prevent them from scrambling.

    Combine and Thicken

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Cool and Flavor

    Remove the mixture from heat and stir in the vanilla extract. Let it cool to room temperature and then refrigerate until chilled (at least 4 hours or overnight).

    Churn the Gelato

    Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer's instructions. If adding flavors, mix in the desired flavor at this stage.

    Freeze and Serve

    Transfer the gelato to a container and freeze for at least 2 hours before serving. Enjoy your homemade gelato!
