Prepare the Branzino
Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat it dry with paper towels. Season the cavity of the fish with black pepper and fill it with lemon slices and rosemary sprigs.

Prepare the Salt Crust
In a large mixing bowl, combine the coarse sea salt with a little water until it resembles wet sand. This will help it hold its shape when baked.

Form the Salt Crust
Spread a thin layer of the salt mixture on a baking sheet. Place the branzino on top and cover it completely with the remaining salt, pressing down firmly to ensure it forms a solid crust.

Bake the Fish
Bake the fish in the preheated oven for about 25-30 minutes. The salt crust will harden and create a seal that steams the fish, keeping it moist and flavorful.

Serve
Remove the baking sheet from the oven and let it rest for a few minutes. Carefully crack open the salt crust and remove it from the fish. Drizzle the fish with olive oil before serving. Enjoy your Branzino al Sale with a side of vegetables or a salad.
