Prepare the Beef

Season the boneless beef short ribs with salt and black pepper on all sides.

Sear the Ribs

In a large Dutch oven, heat the olive oil over medium-high heat. Add the beef short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

Sauté Vegetables

In the same pot, add the chopped onion and carrots. Sauté for about 5 minutes until the onion is translucent. Add the minced garlic and cook for another minute until fragrant.

Deglaze the Pot

Pour in the red wine, scraping up any brown bits from the bottom of the pot. Allow the wine to simmer for about 3-5 minutes.

Add Liquids and Herbs

Return the beef short ribs to the pot. Add the beef broth, bay leaves, thyme, and rosemary. Bring to a gentle simmer.

Braise the Ribs

Cover the pot and transfer it to a preheated oven at 325°F (160°C). Braise for 2.5 to 3 hours, or until the beef is tender and easily pulls apart with a fork.

Remove the pot from the oven and let it sit for a few minutes before serving. Discard the bay leaves and serve the short ribs with the sauce and vegetables.
