Preparing the Ginger Carrot Fennel Jus

    Cook the Vegetables

    In a medium saucepan, combine the diced carrots, fennel, ginger, and garlic. Sauté over medium heat for 5 minutes until softened.

    Add Broth

    Pour in the vegetable broth, honey, and soy sauce. Bring to a simmer and cook for 15-20 minutes until the carrots are tender.

    Blend the Jus

    Using an immersion blender, purée the mixture until smooth. Season with salt and pepper to taste. Keep warm.

Cooking the Ahi Tuna

    Prepare the Tuna

    Pat the Ahi tuna steaks dry with paper towels. Rub both sides with olive oil, salt, and black pepper. Coat with sesame seeds.

    Sear the Tuna

    Heat a skillet over high heat. Once hot, add the tuna steaks and sear for 1-2 minutes on each side for rare doneness.

    Rest and Slice

    Remove the tuna from the skillet and let rest for a minute. Slice the tuna into thin slices.
