    Prepare the Celeriac Mash

    Peel and chop the celeriac into small cubes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper until creamy. Set aside.

    Cook the Italian Sausage

    In a skillet over medium heat, cook the Italian sausage until browned and cooked through. Remove from skillet and slice.

    Sauté the Garlic Rapini

    In the same skillet, add olive oil and sauté garlic rapini until tender, about 4-5 minutes. Add heirloom cherry tomatoes and cook for an additional 2 minutes. Season with salt and pepper.

    Grill the Pork Chops

    Preheat the grill to medium-high heat. Season the pork chops with salt, pepper, and fresh herbs. Grill for about 5-7 minutes per side or until the internal temperature reaches 145°F (63°C). Let rest for 5 minutes.

    Prepare the Herb Chicken Jus

    In a saucepan, simmer chicken stock until reduced by half. Whisk in butter and additional fresh herbs. Season with salt and pepper.

    Plate the Dish

    On each plate, serve a portion of celeriac mash, topped with sliced Italian sausage. Place the grilled pork chop on the side and arrange sautéed garlic rapini and cherry tomatoes around. Drizzle with herb chicken jus before serving.
