Prepare the Ingredients
Wash the collard greens thoroughly, remove the tough stems, and chop them into bite-sized pieces. Dice the onion and cut the pork belly into small cubes.

Cook the Pork Belly
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the pork belly and cook until it is browned and crispy, about 5-7 minutes.

Sauté the Onion
Add the diced onion to the pot with the pork belly and sauté until the onion becomes translucent, about 3-5 minutes.

Add Collard Greens
Stir in the chopped collard greens and cook for a few minutes until they begin to wilt.

Add Chicken Stock
Pour in the chicken stock, bring to a simmer, and cover the pot. Let it cook for about 30-40 minutes, or until the collard greens are tender.
