Prepare the Sauce
In a skillet, heat olive oil over medium heat. Add roasted poblano peppers and diced tomatoes. Cook for about 5-7 minutes until softened. Season with salt and black pepper. Remove from heat and set aside.

Assemble the Enchiladas
Preheat your oven to 375°F (190°C). In a large bowl, mix shredded chicken, cooked rice, and half of the salsa verde. Take a flour tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in a greased baking dish.

Top with Sauce and Cheese
Once all tortillas are rolled and placed in the baking dish, pour the poblano tomato sauce over the enchiladas. Drizzle the remaining salsa verde on top and sprinkle with shredded pepper jack cheese.
