Fried Green Tomatoes

    Prepare the Breading

    In a shallow bowl, combine flour, cornmeal, salt, and black pepper. In another bowl, whisk eggs and milk together.

    Bread the Tomatoes

    Slice the green tomatoes into 1/2-inch thick slices. Dip each slice first into the egg mixture, then into the flour mixture, coating both sides.

    Fry the Tomatoes

    In a large skillet, heat vegetable oil over medium heat. Fry the breaded tomato slices until golden brown, about 3-4 minutes per side. Drain on paper towels.

Pimento Cheese

    Make the Pimento Cheese

    In a mixing bowl, combine cream cheese, sharp cheddar cheese, pimentos, mayonnaise, garlic powder, and onion powder. Mix until well combined.

Basil Mayo

    Make the Basil Mayo

    In a small bowl, mix together mayonnaise, chopped fresh basil, and lemon juice until smooth.

Assembly

    Cook the Bacon

    In a skillet, cook the bacon slices until crispy. Drain on paper towels.

    On a slice of sourdough bread, spread a layer of pimento cheese, followed by fried green tomatoes, crispy bacon, a sprinkle of arugula, and a drizzle of balsamic vinegar. Top with another slice of sourdough.
