    Prepare the Base

    In a saucepan over medium heat, combine whole milk, heavy cream, and granulated sugar. Stir until the sugar is completely dissolved.

    Add Cinnamon

    Add the ground cinnamon and a pinch of sea salt to the mixture, stirring well to combine. Heat the mixture until it is hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour about a cup of the hot milk mixture into the egg yolks, whisking constantly to temper them. Then, pour the egg yolk mixture back into the saucepan with the remaining milk mixture.

    Cook the Mixture

    Cook the mixture over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).
