Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.

Make the Marinade
In a bowl, combine soy sauce, brown sugar, chili paste, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and black pepper. Mix well to create a marinade.

Marinate the Pork
Place the pork belly in a zip-top bag or a shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours, preferably overnight.

Bake the Pork Belly
Remove the pork belly from the marinade and place it on a baking sheet. Bake in the preheated oven for about 2.5 to 3 hours, basting with the marinade every 30 minutes.

Glaze the Pork Belly
Once the pork belly is tender, increase the oven temperature to 425°F (220°C) and bake for an additional 20-30 minutes until the skin is crispy and caramelized.

Remove from the oven, let it rest for 10 minutes, then slice and serve garnished with chopped green onions.
