1. Prepare the Crust
In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
2. Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla extract, mixing until well combined. Add eggs one at a time, mixing on low speed until just blended.
3. Bake the Cheesecake
Pour the filling over the crust in the springform pan. Bake in a preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set and slightly jiggly.
4. Cool and Chill
Turn off the oven and let the cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
5. Serve with Strawberries
Before serving, slice the fresh strawberries and place them on top of the cheesecake for a delicious garnish.
