    Prepare the pickles

    Slice the cucumbers and place them in a jar. Add vinegar, water, sugar, and salt. Let them sit for at least an hour or overnight in the fridge.

    Caramelize the onions

    In a skillet over medium heat, melt butter and add sliced onions. Cook, stirring occasionally, until they are golden brown and caramelized (about 15-20 minutes).

    Make the horsey sauce

    In a small bowl, mix together mayonnaise and horseradish. Adjust the amount of horseradish to taste.

    Prepare the burger patties

    In a bowl, mix ground beef with salt and black pepper. Form into 2 equal patties.

    Cook the burgers

    Grill or pan-fry the patties over medium-high heat for about 4-5 minutes on each side, or until desired doneness.

    Assemble the burgers

    Toast the burger buns, then spread pimento cheese on the bottom bun, add the cooked patty, top with caramelized onions, pickles, and a generous dollop of horsey sauce. Cover with the top bun.
