    Prepare the Short Ribs

    Preheat your oven to 350°F (175°C). Season the short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Add the short ribs and sear them for about 3-4 minutes on each side until browned. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.

    Deglaze with Wine

    Pour in the Cabernet Sauvignon and scrape the bottom of the pot to deglaze. Bring to a simmer and let it cook for about 5 minutes.

    Add Stock and Seasoning

    Stir in the beef stock, dried thyme, and bay leaves. Return the short ribs to the pot.

    Braise in Oven

    Cover the pot and transfer it to the preheated oven. Braise for about 2.5 to 3 hours until the meat is tender and falling off the bone.

    Finish with Blue Cheese

    Remove the pot from the oven. Carefully take out the short ribs and place them on a serving platter. Stir the crumbled blue cheese into the sauce in the pot until melted and combined.

    Serve

    Spoon the sauce over the short ribs and garnish with chopped parsley before serving.
