    Prepare the Lamb

    Preheat your oven to 325°F (165°C). Trim any excess fat from the lamb shoulder and pat it dry with paper towels.

    Marinate

    In a small bowl, mix together olive oil, minced garlic, chopped rosemary, juice of the lemon, salt, and black pepper. Rub this mixture all over the lamb shoulder. Let it marinate for at least 30 minutes at room temperature or up to overnight in the refrigerator.

    Sear the Lamb

    In a large oven-proof skillet or Dutch oven, heat a little more olive oil over medium-high heat. Add the marinated lamb shoulder and sear it on all sides until browned, about 4-5 minutes per side.

    Add Liquids

    Once the lamb is browned, pour in the red wine and vegetable broth. Bring the mixture to a simmer.

    Slow Cook

    Cover the skillet or Dutch oven with a lid and transfer it to the preheated oven. Cook for about 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork.

    Remove the lamb from the oven and let it rest for 15-20 minutes before slicing. Serve with the pan juices over the top.
