Hashbrowns

    Prepare Hashbrowns

    In a large skillet, heat olive oil over medium heat. Add frozen hashbrowns, spreading them evenly in the pan.

    Cook Hashbrowns

    Season hashbrowns with salt and black pepper. Cook for about 5-7 minutes until the bottom is golden brown. Flip and cook for another 5-7 minutes until crispy.

Tenderloin

    Prepare Tenderloin

    While the hashbrowns are cooking, season the beef tenderloin with garlic powder, salt, and black pepper.

    Cook Tenderloin

    In a separate skillet, melt butter over medium-high heat. Add the seasoned tenderloin and sear for 3-4 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Slice Tenderloin

    Once cooked, let the tenderloin rest for 5 minutes before slicing it into thin pieces.

Sunny-side up eggs

    Cook Eggs

    In the same skillet used for the tenderloin, add butter and lower the heat to medium. Crack the eggs into the skillet and cook until whites are set but yolks are still runny, about 3-4 minutes.

    Assemble the Dish

    On a plate, layer the crispy hashbrowns, top with slices of tenderloin, add sunny-side up eggs on top, and garnish with roasted red peppers and onions. Serve with your choice of toast.
