Frittata Preparation

    Cook the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage to the skillet, breaking it up with a spoon as it cooks. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and mushrooms, and sauté until softened, about 4-5 minutes. Add the roasted red bell peppers and spinach, cooking until the spinach wilts, about 2-3 minutes. Season with salt and pepper.

    Combine Ingredients

    In a large bowl, whisk together the eggs. Add the cooked sausage and the sautéed vegetable mixture to the eggs. Stir in the mozzarella cheese until well combined.

    Cook the Frittata

    Pour the egg mixture back into the skillet over medium-low heat. Cook undisturbed for about 5-7 minutes until the edges begin to set. You may need to lift the edges with a spatula to allow uncooked egg to flow underneath.

    Finish the Frittata

    To fully cook the top, you can either cover the skillet with a lid and let it cook for an additional 5 minutes or place the skillet under a broiler for 2-3 minutes until the top is golden and set.

    Toast the Bread

    While the frittata is cooking, toast the slices of Italian bread until golden brown. Spread butter on each slice before serving.
