Method
Preparation
- 1
Cook the Bacon
In a large skillet over medium heat, cook the applewood bacon until crispy, about 5-7 minutes. Remove and set aside on paper towels to drain excess fat.
- 2
Cook the Sausage
In the same skillet, add the sausage and cook until browned and cooked through, about 5-6 minutes. Once cooked, crumble it into smaller pieces and set aside.
- 3
Sauté the Vegetables
Add the diced onions to the skillet and sauté until translucent, about 3-4 minutes. Then add the roasted red peppers and cook for another 2 minutes.
- 4
Prepare Hashbrowns
In the same skillet, add the hashbrowns and spread them evenly. Cook until golden brown and crispy, about 5-7 minutes, flipping halfway through.
Assembly
- 5
Combine Ingredients
Once the hashbrowns are crispy, layer the cooked sausage, crumbled bacon, cheddar cheese, and mozzarella cheese on top of the hashbrowns. Reduce heat to low and cover the skillet to allow the cheese to melt, about 2-3 minutes.
- 6
Cook the Eggs
In a separate non-stick skillet, cook the eggs sunny-side up to your preference, about 3-4 minutes.
- 7
- 8
Serve with Toast
Toast the bread slices and serve alongside the skillet for a complete meal.
