Bacardi Superior Rum, Seedless Watermelon, Mint Leaves, Lime

In a blender, puree the seedless watermelon until smooth. Strain through a fine mesh sieve into a bowl to remove pulp, if desired.

Prepare the Watermelon

In a cocktail shaker, add the mint leaves and half of the lime (cut into wedges). Use a muddler or the back of a spoon to gently press down on the mint and lime to release the juices and oils.

Muddle the Mint

Add the watermelon puree, Bacardi Superior Rum, and simple syrup to the shaker. Fill the shaker with ice and shake well until chilled.

Combine the Ingredients

Strain the mixture into a glass filled with ice. Top with club soda and garnish with additional mint leaves and a lime wedge, if desired.
