    Prepare the Bolognese Sauce

    In a large pan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, cooking until softened.

    Add minced garlic and cook for another minute until fragrant.

    Increase heat to medium-high and add the ground veal, pork, and beef. Cook until browned, breaking it apart with a spoon.

    Pour in the red wine and allow it to simmer until mostly evaporated.

    Stir in the crushed tomatoes, beef stock, bay leaves, salt, and pepper. Bring to a simmer, then reduce heat to low and cover. Let simmer for at least 30 minutes, stirring occasionally.

    Cook the Tagliatelle

    While the sauce is simmering, cook the tagliatelle according to package instructions in salted boiling water until al dente.

    Drain the pasta and reserve a cup of pasta water.

    Toss the drained tagliatelle with the Bolognese sauce, adding reserved pasta water as needed to reach desired consistency.

    Serve hot, garnished with grated Parmesan cheese.
