Ravioli Preparation

Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

Prepare the Filling
Blanch the spinach in boiling water for 1 minute, then drain and chop finely. In a bowl, mix the chopped spinach with ricotta cheese, black pepper, and salt until well combined.

Roll Out the Dough
Divide the dough into quarters. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour to prevent sticking.

Assemble the Ravioli
On one sheet of pasta, place small spoonfuls of the filling about 1 inch apart. Moisten the edges with water and place another sheet of pasta on top. Press down around the filling to seal and cut out individual ravioli.

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes, or until they float to the surface. Remove with a slotted spoon.
