Prepare the Dried Porcini
Soak the dried porcini mushrooms in warm water for about 20 minutes until soft. Drain and chop them roughly.

Cook the Pappardelle
In a large pot of salted boiling water, cook the pappardelle pasta according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shiitake mushrooms and the chopped porcini mushrooms, and cook for about 5-7 minutes until they are browned and soft.

Season and Serve
Stir in the chopped parsley and grated Parmigiano Reggiano. Season with salt and black pepper to taste. Serve immediately, garnished with additional cheese if desired.
