    Melt the Chocolate

    Chop the dark chocolate and butter into small pieces and melt them together in a heatproof bowl over a pot of simmering water. Stir until smooth and combined. Remove from heat and allow to cool slightly.

    Whip the Egg Yolks

    In a separate bowl, whisk the egg yolks and sugar together until pale and fluffy. Gradually add the melted chocolate mixture to the egg yolk mixture, stirring continuously until fully combined.

    Beat the Egg Whites

    In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Carefully fold the egg whites into the chocolate mixture in three additions, ensuring not to deflate the mixture.

    Prepare the Whipped Cream

    In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold half of the whipped cream into the chocolate mixture to lighten it, then fold in the remaining whipped cream until no streaks remain.

    Chill the Mousse

    Divide the mousse into serving dishes and refrigerate for at least 2 hours or until set.
