1. Prepare the Branzino
Using a sharp knife, thinly slice the branzino fillet into carpaccio-style pieces. Arrange them on a serving plate in a single layer.
2. Prepare the Citrus
Zest the orange, lime, and grapefruit, then juice the lime and half of the orange. Segment the grapefruit and the remaining orange, removing any membrane.
3. Slice the Avocado
Cut the avocado in half, remove the pit, and slice it thinly. Arrange the avocado slices around the branzino on the plate.
4. Assemble the Dish
Sprinkle the capers over the arranged branzino and avocado. Add the citrus segments on top.
5. Dress the Carpaccio
Drizzle olive oil and the lime juice over the dish. Season with sea salt and black pepper to taste.
