Cooking Instructions
- 1
Prepare the Cod
Rinse the wild Atlantic cod fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.
- 2
Set Up Breading Station
In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and breadcrumbs in the third.
- 3
Bread the Cod
First, dredge each cod fillet in flour, shaking off the excess. Then, dip into the beaten eggs, allowing excess to drip off, and finally coat with breadcrumbs. Set aside.
- 4
Prepare the Broccoli Rabe
Bring a large pot of salted water to a boil. Add the broccoli rabe and cook for 2-3 minutes until tender. Drain and set aside.
- 5
Fry the Cod
In a large skillet, heat olive oil over medium-high heat. Fry the breaded cod fillets for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from skillet and drain on paper towels.
