Prepare the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the zucchini, bell pepper, cherry tomatoes, and red onion. Season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender. Remove from the skillet and set aside.

Sear the Grouper
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Season the grouper fillets with salt and black pepper. Place the fillets in the skillet and sear for about 4-5 minutes on each side, or until the fish is cooked through and has a golden crust.

Plate and Serve
On each plate, serve a portion of the sautéed summer vegetables, topped with a seared grouper fillet. Drizzle with garden herb pesto before serving.
