Method

Brining the Chicken

    Prepare Brine

    In a bowl, mix sweet tea and salt until dissolved. Submerge chicken breasts in the brine, cover, and refrigerate for at least 2 hours, preferably overnight.

Cooking the Chicken

    Coat the Chicken

    Remove chicken from brine and pat dry. In one bowl, mix flour, black pepper, garlic powder, and onion powder. In another bowl, beat the eggs. In a third bowl, place pecan meal.

    Fry the Chicken

    Dip chicken first in flour mixture, then in egg, and finally in pecan meal. Heat oil in a pan over medium heat and fry chicken until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Making the Waffles

    Prepare Waffle Batter

    In a large bowl, combine flour, baking powder, sugar, and salt. In another bowl, whisk eggs, milk, vegetable oil, and vanilla extract together. Combine wet and dry ingredients until just mixed.

    Cook the Waffles

    Preheat a waffle iron and pour batter into the iron. Cook according to manufacturer's instructions until waffles are golden brown.

Assembly

    Serve

    Place a waffle on a plate, top with fried chicken, drizzle with jalapeño-peach jam and strawberry syrup, and garnish with fresh strawberries.
