Pimento Cheese Drop Biscuits

Preheat the Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Incorporate Butter
Cut the unsalted butter into small pieces and add to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Cheese and Pimentos
Stir in the shredded sharp cheddar cheese and diced pimentos until evenly distributed.

Mix in Buttermilk
Pour in the buttermilk and mix gently until just combined. Be careful not to overmix; the dough should be slightly sticky.

Drop Biscuits onto Sheet
Using a spoon or a cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.
