Preparation and Cooking

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.

    Prepare the Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with cornmeal mixed with black pepper.

    Breading the Tomatoes

    Dredge each tomato slice in flour, dip in the beaten eggs, and finally coat with the cornmeal mixture.

    Cook the Bacon

    In a skillet, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pan.

    Fry the Tomatoes

    In the same skillet with bacon drippings, heat cooking oil over medium-high heat. Fry the breaded green tomatoes in batches until golden brown on both sides, about 3-4 minutes per side.

    Prepare the Black-Eyed Peas and Corn

    In a separate pot, heat black-eyed peas and chopped bell pepper with a little salt and pepper until warm, about 5-7 minutes.

    Plate the fried green tomatoes, top with black-eyed peas and corn mixture, crumbled bacon, and drizzle with gingerline sauce. Garnish with chopped chives.
