    Prepare the Tomatoes

    Preheat your oven to 400°F (200°C). Slice the cherry tomatoes in half, and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until they are soft and slightly caramelized.

    Toast the Bread

    While the tomatoes are roasting, grill or toast the slices of artisan sourdough bread until golden brown and crispy.

    Mash the Avocados

    In a bowl, scoop out the ripe avocados and mash them with a fork. Add a pinch of salt and black pepper to taste. Optionally, add lemon juice for flavor and to prevent browning.

    Prepare the Citrus Vinaigrette

    In a small bowl, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper to create the citrus vinaigrette.

    Assemble the Dish

    Spread a generous amount of smashed avocado onto each slice of toasted sourdough. Top with the roasted tomatoes and a handful of mixed greens. Drizzle with the citrus vinaigrette before serving.
