Preparation and Cooking
Prepare the Mushrooms
Clean the portobello mushrooms and slice them into fry-shaped pieces.
Make the Tempura Batter
In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add the cold sparkling water until the batter is smooth and slightly thick.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Portobello Fries
Dip each piece of portobello mushroom into the tempura batter, allowing the excess to drip off. Carefully place them in the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
Add Truffle Oil
Drizzle the fried portobello fries with truffle oil while they are still hot.
