Caramelize the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized (about 30-40 minutes).

Add Sherry and Broth

Pour in the sherry wine and scrape any brown bits off the bottom of the pot. Let it simmer for about 5 minutes. Then add the beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 20 minutes.

Prepare the Croutons

While the soup is simmering, preheat your oven to 350°F (175°C). Place the slices of French bread on a baking sheet and toast them in the oven for about 10 minutes or until golden brown.

Assemble the Soup

Remove the bay leaves from the soup. Ladle the hot soup into oven-safe bowls, top with a slice of toasted French bread, and sprinkle the provolone and Swiss cheese generously over the top.

Melt the Cheese

Place the bowls under the broiler for about 2-3 minutes, or until the cheese is melted and bubbly. Watch closely to avoid burning.
