Veggie Burger Patty Preparation

    Prepare Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

    Mash Black Beans

    In a large mixing bowl, add the black beans and mash them with a fork or potato masher until mostly smooth, leaving a few lumps for texture.

    Combine Ingredients

    Add the cooked quinoa, grated carrot, red bell pepper, onion, garlic, cumin, paprika, salt, black pepper, and egg (or flax egg) to the mashed black beans. Mix well until all ingredients are combined. Stir in the bread crumbs until the mixture holds together.

    Form Patties

    Divide the mixture into 2 equal portions and shape each into a patty, about 1 inch thick.

    Cook Patties

    Heat a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until golden brown and heated through.

Fries Preparation

    Preheat Oven

    Preheat the oven to 425°F (220°C).

    Prepare Potatoes

    In a large bowl, toss the potato wedges with olive oil, salt, black pepper, and paprika until evenly coated.

    Bake Fries

    Spread the potato wedges on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Assembly

    Assemble Burger

    Place the cooked veggie patty on the bottom half of the burger bun. Top with lettuce, tomato slices, pickles, ketchup, and mustard. Place the top half of the bun on to finish.

    Serve

    Serve the veggie burger with a side of baked fries.
