Prepare Tortilla Chips

    Fry Tortilla Chips

    Heat vegetable oil in a large pot over medium-high heat. Cut corn tortillas into triangles (about 6 pieces per tortilla). Once the oil is hot, fry the tortilla triangles in batches until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil. Season with salt while still hot.

Cook the Steak

    Season and Sear

    Season the beef steak with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing thinly against the grain.

Make Cheese Sauce

    Prepare the Sauce

    In a saucepan over medium heat, melt butter. Whisk in the flour and cook for about 1 minute. Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring frequently until it thickens. Lower the heat and add the cheddar cheese and cream cheese, stirring until melted and smooth. Add hot sauce to taste.

Grill Peppers and Onions

    Sauté Vegetables

    In the same skillet used for the steak, add sliced bell peppers and onions. Sauté over medium heat for about 5-7 minutes until softened and slightly caramelized.

Assemble Nachos

    Layer the Ingredients

    On a large plate or platter, layer the fried tortilla chips. Pile the sliced steak on top, followed by the grilled peppers and onions. Drizzle the cheese sauce over the top. Add jalapenos, pico de gallo, and salsa as desired. Finish with dollops of sour cream.
