Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Cook the Pancetta or Guanciale
In a large skillet over medium heat, add the pancetta or guanciale. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat.

Combine Everything
Add the drained spaghetti to the skillet with the crispy meat. Quickly pour the egg and cheese mixture over the hot pasta, tossing everything together to coat the spaghetti. If the sauce is too thick, add reserved pasta water, a little at a time, until desired creaminess is achieved.
