Preparation of Ingredients

    Prepare the Vegetables

    Wash and halve the grape tomatoes. Slice the red bell pepper and yellow squash into thin strips. Rinse the spinach thoroughly and set aside.

    Prepare the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, usually about 2-3 minutes. Drain and set aside.

Grilling the Salmon

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Season the Salmon

    Rub the salmon fillets with olive oil, salt, and black pepper.

    Grill the Salmon

    Place the salmon fillets on the grill skin-side down. Grill for about 6-8 minutes on each side, or until the fish flakes easily with a fork.

Cooking the Vegetables

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the red bell pepper and yellow squash and sauté for about 3-4 minutes until they begin to soften. Add the grape tomatoes and spinach, cooking for an additional 2-3 minutes until the spinach wilts.

Preparing Lemon Dill Cream Sauce

    Make the Sauce

    In a small saucepan over medium heat, combine heavy cream, chopped dill, lemon juice, minced garlic, salt, and black pepper. Stir and let simmer for about 5-7 minutes until slightly thickened.

Plating

    Serve the Dish

    On each plate, arrange a portion of sautéed vegetables, gnocchi, and a grilled salmon fillet. Drizzle with the lemon dill cream sauce and serve immediately.
