Preparation

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Season the chicken breasts with olive oil, salt, and black pepper. Rub the seasoning all over the chicken for even flavor.

    Sear the Chicken

    In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts and sear for 4-5 minutes on each side, or until golden brown.

Assembly and Cooking

    Add Spinach and Tomatoes

    Once the chicken is seared, remove the skillet from heat. Add the fresh spinach and halved grape tomatoes around the chicken in the skillet.

    Spread Pesto

    Spread the pesto sauce evenly over the top of each chicken breast.

    Add Cheeses

    Sprinkle the mozzarella and Parmesan cheese over the pesto-covered chicken and vegetables.

    Bake

    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the cheese is melted and bubbly.

Serving

    Plate the Dish

    Remove the skillet from the oven. Let it rest for a few minutes before serving. Plate the chicken along with the spinach and tomatoes, garnishing with extra basil if desired.
